Hiring developers in foreign countries

I have some ideas for apps/websites and have been looking into hiring developers in India/Eastern Europe/China. I was wondering if anyone had experience with this and could share any tips with me.

I was wondering what precautions you take to prevent somebody from developing an app for you, getting paid and then taking the source code and relaunching under a different name.

Any thoughts?
